The Hogget Box consists of 1/2 leg, 1/2 shoulder, shank, 300g (approx) of mince, 4 bone rack of rib with best end, 4 chops or chump steaks, and either neck fillet or liver. Perfect for the freezer! All from fab sheep reared in Sussex on the South Downs. Hogget (12 months to 3 years) is a meat that is older than lamb, but not as old as mutton.
The hogget is carefully reared from a fantastic flock of primitive and rare breed sheep (Manx Loaghtan, Icelandic and Shetland) called The Wild Ones. Bred in Findon under the care of Greg Valerio, who before becoming a shepherd was an ethical jewellery designer and seller. You may be familiar with his company Cred that used to be in Chichester.
Please note that Greg can only deliver to us at Draper’s Yard on the first and third Fridays of the month, so please bear this in mind when ordering.
